2/3rds block of tofu
1/2-1 cup yellow grape tomatoes (or…whatever color tomatoes you have)
2 tsp soy sauce
1 lemon or lemon juice
1 1/2 cup of quinoa
optional: thyme, oregano, salt
1. Cube tofu and marinate for a few minutes in soy sauce and lemon juice.
2. Heat up oil and cook tofu and sliced grape tomatoes. Every few minutes, turn the slices of tofu so that none of it burns and it all gets brown and delicious.
3. In the meantime cook your quinoa and dice half an avocado.
4. After ten to fifteen minutes your tofu should be cooked. Serve over a bed of quinoa and top it off with avocado, sriracha, thyme, oregano, and salt for an early death.
